A traditional toji guild from Echigo (the old name for Niigata Prefecture). Echigo toji developed the tanrei karakuchi (light and dry) brewing style that revolutionized Japanese sake in the 1970s-80s.

Echigo toji leveraged Niigata's soft snowmelt water and Gohyakumangoku rice to create sake that was cleaner, drier, and more refreshing than the sweeter, heavier styles that previously dominated. This approach — emphasizing kire (clean finish) and karakuchi (dryness) — became enormously popular and shifted national taste preferences. Famous Niigata brands including Kubota, Hakkaisan, and Koshi no Kanbai reflect Echigo toji philosophy. The guild also pioneered low-temperature ginjo fermentation techniques that became standard practice.
