The Nanbu toji guild has produced more gold medal winners at the Annual Japan Sake Awards than any other school. Their style emphasizes precision, cleanliness, and aromatic refinement — qualities honed by the demanding cold climate of northern Japan. Nanbu toji historically traveled to breweries across Japan, from Hokkaido to Kyushu, spreading their techniques nationwide. The guild maintains a formal training and certification system, and Nanbu-trained brewers are found at many of Japan's most acclaimed kura.
