## From Quiet Region to Star Prefecture

Yamagata, in Japan's rural Tohoku region, has risen from relative obscurity to become one of the most exciting sake-producing areas in the world. The prefecture was the first to receive a Geographical Indication (GI) for sake in 2016, recognizing its distinctive quality and regional identity.

## Dewasansan Rice

Yamagata's signature sake rice, Dewasansan, was developed specifically for the prefecture's climate and brewing style. It produces sake with a gentle, rounded character and subtle aromatics. Combined with Yamagata's clean mountain water and cold climate, Dewasansan creates a house style that is both elegant and approachable.

## Innovative Breweries

Takagi Shuzo's Juyondai is one of the most sought-after sake brands in the world, with bottles selling out instantly and commanding premium secondary market prices. Tatenokawa has earned international acclaim for its extreme polishing (as low as 1%) and refined style. Dewazakura pioneered the popularization of ginjo sake in the 1980s.

## The GI Advantage

Yamagata's GI designation requires that qualifying sake use rice grown in the prefecture, water from the prefecture, and be brewed and bottled within Yamagata. This terroir-focused approach parallels European wine appellations and signals Yamagata's commitment to regional identity and quality.

## Climate and Terroir

Cold winters, clean snow-melt water, and pristine mountain air create ideal brewing conditions. The temperature swings between hot summers and frigid winters stress the rice in ways that develop distinctive flavors. The mountainous landscape provides diverse microclimates across the prefecture.

## The Future of Yamagata

With international recognition growing, a strong research institute, and a new generation of ambitious brewers, Yamagata is positioned for continued ascent. The prefecture demonstrates that tradition and innovation can coexist, producing sake that honors heritage while pushing creative boundaries.
