## The Toji Homeland

Iwate Prefecture holds a unique place in sake history as the birthplace of the Nanbu {{glossary:toji}} guild — the most prestigious and widespread of Japan's traditional master brewer schools. The Nanbu Toji Association, based in the town of Ishidoriya, has trained thousands of brewers who spread Iwate's techniques across the country.

## The Nanbu Toji Tradition

Nanbu toji were historically farmers who traveled to breweries across Japan during the winter off-season. Their reputation for skill, discipline, and clean brewing techniques made them the most sought-after seasonal brewers. While the guild system has declined, the technical standards and philosophical approach of the Nanbu school continue to influence sake production nationwide.

## Clean and Balanced

Iwate sake reflects the Nanbu emphasis on cleanliness and balance. The prefecture's soft water and cold climate produce sake that is technically precise, with clear flavors and a well-structured finish. The style sits between Niigata's austerity and Akita's richness.

## Notable Breweries

Nanbu Bijin, Akabu, and Washinoo are among Iwate's most acclaimed producers. Nanbu Bijin's Awa Sake (sparkling) has earned international recognition. Akabu, revived by a young brewer, demonstrates the vitality of Iwate's sake culture.

## Ginga no Shizuku Rice

Iwate's signature sake rice, Ginga no Shizuku (drops of the galaxy), was developed by the prefectural research institute. It produces sake with clean aromatics and a crystalline quality that embodies the clear mountain water of the region.

## Post-Disaster Resilience

The 2011 Great East Japan Earthquake and tsunami devastated Iwate's coast, affecting some coastal breweries. The rebuilding effort strengthened community bonds and brought renewed international attention to Iwate sake. Recovery releases became powerful symbols of resilience.
