Über

Isolated from sunflower blossoms as part of the Hanakoubo project, this wild yeast creates remarkably bright and cheerful sake with citrus-driven aromatics. The resulting sake has an almost tropical, sunny quality that differs markedly from the apple-and-melon profile of conventional ginjo. Popular among younger brewers and a favorite for summer seasonal releases.
