Sake served at room temperature, approximately 15-20 degrees Celsius. Despite the kanji meaning 'cold,' hiya traditionally refers to sake that is neither warmed nor chilled — simply poured at ambient temperature.

Before refrigeration, all sake not actively warmed was hiya. The term can cause confusion with modern drinkers who associate 'cold' with chilled (reishu). At room temperature, sake shows its most natural and unmanipulated character: neither the aroma-enhancing effect of warmth nor the palate-tightening effect of cold. Many toji and sake judges taste at hiya to evaluate a sake's true balance. For the drinker, hiya is the most forgiving temperature — it suits a wide range of styles from junmai to honjozo and requires no preparation beyond opening the bottle.
