Akita's extreme winters and abundant snowmelt create ideal brewing conditions in this northern Tohoku prefecture. Known for rich, full-bodied sakes with good umami depth, Akita has emerged as a modern craft sake innovator with breweries like Aramasa reviving kimoto and vintage-sake techniques. The prefecture's own Miyama Nishiki and Akita Sake Komachi rice are widely used.
