Akishika (Autumn Deer) in Nose, northern Osaka is a pioneering natural sake brewery that grows its own rice on fields surrounding the kura. Owner-toji Oku Hiroaki practices organic rice farming and kimoto brewing, producing richly textured, earthy sakes with deep umami and natural acidity.
