Pure rice ginjo sake, combining the junmai (no added alcohol) philosophy with ginjo-grade polishing to 60% or less. Junmai ginjo balances the fuller body of pure rice brewing with the aromatic elegance of the ginjo method.

Junmai ginjo has become one of the most popular premium categories both in Japan and internationally. Without added alcohol to amplify aromatics, the fruit and floral notes are slightly more subtle than non-junmai ginjo, but the palate is rounder and more textured. This style is extremely food-friendly, pairing beautifully with sashimi, tempura, and light grilled dishes. Many sommeliers consider junmai ginjo the most versatile sake grade for restaurant wine lists.
