Echigo toji leveraged Niigata's soft snowmelt water and Gohyakumangoku rice to create sake that was cleaner, drier, and more refreshing than the sweeter, heavier styles that previously dominated. Famous Niigata brands including Kubota, Hakkaisan, and Koshi no Kanbai reflect Echigo toji philosophy.
