## What Makes Sake Special

{{glossary:tokubetsu}} (特別) means "special" and can be applied to both junmai and {{glossary:honjozo}} grades. The designation signals that the brewer has done something beyond the standard requirements — either higher polishing or a distinctive brewing technique.

## Two Paths to Tokubetsu

A sake qualifies as tokubetsu in one of two ways. The first is a {{glossary:seimai-buai}} of 60% or less — ginjo-level polishing applied to a junmai or honjozo base. The second is any "special" brewing method that the brewer considers noteworthy, such as using a rare rice variety, an unusual yeast, or an extended aging period.

## Tokubetsu Junmai

Tokubetsu junmai occupies a sweet spot between standard {{glossary:junmai}} and {{glossary:junmai-ginjo}}. When made with 60% polishing, it offers ginjo-level refinement at a more accessible price, without the full ginjo-zukuri production method. The sake retains junmai's satisfying body while gaining additional polish and clarity.

## Tokubetsu Honjozo

Tokubetsu honjozo similarly bridges honjozo and ginjo. The higher polishing or special technique elevates the standard honjozo template, producing sake with more aromatic complexity and a smoother finish. These are outstanding candidates for restaurants seeking quality at manageable price points.

## Label Transparency

The special attribute must be stated on the label. You might see notes like "polished to 55%," "brewed with Yamada Nishiki from Hyogo," or "aged 6 months at low temperature." This transparency helps consumers understand what makes each tokubetsu unique.

## The Value Sweet Spot
