Iwate is the homeland of the Nanbu Toji, Japan's largest and most influential toji guild whose techniques spread nationwide. The prefecture's cold climate, clean water, and the Nanbu tradition of meticulous craftsmanship produce refined, well-balanced sakes. Akabu and Nanbu Bijin have gained international recognition, and local Gin Otome rice adds regional character.
