A sake rice variety bred in Yamagata Prefecture and released in 1997. Dewasansan was developed specifically for Yamagata's climate and produces sake with clean, elegant character and moderate ginjo aromatics.

Dewasansan was bred from a cross of Miyama Nishiki and Hana-fubuki, combining cold tolerance with good brewing characteristics. The variety has a medium-sized shinpaku and tolerates polishing to ginjo-level ratios (50-60%). Sake brewed from Dewasansan tends to have lighter body and more delicate aromatics than Yamada Nishiki-based sake, with a clean, refreshing finish. Yamagata has promoted Dewasansan as the foundation of its prefectural sake identity, and most Yamagata breweries include at least one Dewasansan expression in their lineup.
