The Noto Peninsula's remote location and harsh Sea of Japan climate forged a self-reliant brewing culture. Noto toji developed techniques that maximize rice flavor expression, producing sake with notable body, umami richness, and depth. The guild is smaller than Nanbu or Tanba but highly respected. The devastating Noto earthquake of January 2024 severely damaged several Noto-region breweries, prompting an unprecedented solidarity response from the Japanese sake community, with breweries nationwide volunteering equipment, space, and labor to help affected kura resume production.
