## The Sake Capital

Niigata Prefecture on Japan's Sea of Japan coast is the undisputed capital of premium sake. With approximately 90 active breweries — more than any other prefecture — and a reputation for impeccable quality, Niigata sets the standard for the modern sake world.

## The Tanrei Karakuchi Revolution

In the 1960s-80s, Niigata breweries deliberately developed the {{glossary:tanrei-karakuchi}} (light and dry) style that redefined Japanese sake expectations. Clean, precise, and refreshing, this style broke from the heavier, sweeter sake that had previously dominated and launched a national quality revolution.

## Water and Climate

Niigata's pristine snow-melt water is exceptionally soft, producing gentle fermentation and clean-finishing sake. ## Gohyakumangoku Rice

## Beyond Tanrei Karakuchi
