## Not Just Any Rice

The rice used for premium sake is not the same rice you eat for dinner. {{glossary:sakamai}} (sake-specific rice) is a specialized agricultural product, bred over decades for characteristics that are liabilities on the dinner table but invaluable in the brewery.

## Grain Size

Sake rice grains are significantly larger than table rice — typically 25-30% heavier. This extra size is critical because it provides more material to survive the intense {{glossary:seimai-buai}} (polishing) process without cracking or breaking. Smaller grains would shatter under the stress of heavy milling.

## The Shinpaku Core

The {{glossary:shinpaku}} — the opaque white starchy center — is the hallmark of quality sake rice. This core is composed of loosely packed starch granules with air pockets between them. The porous structure absorbs water readily and allows {{glossary:koji}} mold hyphae to penetrate deep into the grain.

## Low Protein and Fat

The outer layers of all rice contain protein, fat, vitamins, and minerals. In table rice, these are nutritionally desirable. In sake brewing, they produce harsh flavors, excessive {{glossary:umami}}, and cloudiness. Sake rice varieties are bred to concentrate these compounds in the outer layers, where polishing can remove them efficiently.

## Challenging to Grow

Sake rice is notoriously difficult to cultivate. The tall plants are prone to lodging (falling over) in wind and rain. Longer growing seasons mean greater exposure to typhoons and pests. Yields are lower than table rice. These challenges make sake rice more expensive and more dependent on skilled farming.

## Over 100 Varieties

Japan has registered over 100 sake rice varieties, though only about 30 are widely used commercially. Each prefecture often has its own local varieties adapted to regional climate. The interplay between rice genetics, terroir, and brewing technique creates sake's extraordinary diversity.
