The oldest pure-lineage sake rice still in cultivation, Omachi was discovered in Okayama Prefecture in 1859. It is the genetic ancestor of both Yamada Nishiki and Gohyakumangoku. Notoriously difficult to grow due to its tall stalks and susceptibility to lodging, Omachi rewards patient brewers with rich, full-bodied sakes with deep umami and complexity. It has a passionate cult following.
