Yamada Nishiki polished to 30% yields an ultra-refined Daiginjo with pristine clarity, delicate floral notes, and a bone-dry finish that is distinctly Niigata. This is the sake that launched a thousand jizake pilgrimages in the 1970s and remains a collector's benchmark.
