About

At 45°C, jokan is firmly in warm territory. The heat amplifies umami and creates a distinct warming sensation as it goes down. Aromas become more volatile and pronounced, and sharper or more acidic sakes become rounder and more approachable. The texture becomes noticeably lighter as alcohol vapors lift from the surface. Ideal for cold weather and hearty food pairings.

Recommended Grades

Junmai, Honjozo, Futsushu, Kimoto — robust styles that can handle heat. Avoid for delicate ginjo types whose aromatics dissipate at this temperature.
