About

A comforting 40°C, nurukan is where heated sake truly begins to express its warming character. The warmth is clearly perceptible but never aggressive. Aromas become more pronounced as volatile compounds are gently released. Rice sweetness and umami are fully expressed, and the finish gains a satisfying length. Many sake connoisseurs consider nurukan the finest temperature for quality junmai sake.

Recommended Grades

Junmai, Tokubetsu Junmai, Kimoto, Yamahai, aged koshu — rich styles that bloom beautifully at this temperature.
