Nishiyama Sake Brewery in Tamba-Sasayama, inland Hyogo produces the Kotsuzumi (Small Drum) brand. Located in the rural heartland far from the Nada coast, they use mountain-spring water and Hyogo-grown Yamada Nishiki to produce refined, elegant sakes with a distinctive floral character. Their Hanafubuki Ginjo is a perennial favorite among sake connoisseurs.
