The Daisen mountain provides exceptionally pure soft water, and Tottori developed its own Goriki sake rice — nearly extinct but revived by passionate local breweries. Chiyomusubi and Hikami Shuzo produce characterful sakes that reflect the San'in region's quiet, artisanal spirit.
