Shizuoka emerged as a sake powerhouse in the 1980s thanks to the development of proprietary yeast strains, particularly the Shizuoka HD-1 yeast that produces elegant ginjo-ka. Soft water from Mt. Fuji's aquifers gives Shizuoka sake its characteristic gentle, clean profile. The prefecture's relatively warm climate requires extra care in temperature-controlled fermentation.
