## The Silent Majority

{{glossary:futsu-shu}} (普通酒) — ordinary sake — is what most Japanese people actually drink. Without the premium designation of {{glossary:tokutei-meisho-shu}}, futsu-shu occupies roughly 70% of the market by volume. Understanding this category gives a more realistic picture of sake culture.

## What Futsu-shu Is and Is Not

Futsu-shu has no minimum polishing requirement and may contain larger amounts of added alcohol, acids, and sugars than premium grades. This does not automatically mean low quality. Some craft breweries produce futsu-shu that rivals premium sake, choosing not to pursue premium designations for philosophical or marketing reasons.

## The Quality Spectrum

At the bottom end, mass-produced futsu-shu is inexpensive and functional — the sake equivalent of box wine. At the top end, carefully crafted futsu-shu from quality-focused breweries can deliver remarkable flavor and complexity. The category is simply too diverse for blanket judgments.

## Where Futsu-shu Excels

Futsu-shu is the backbone of izakaya drinking, home cooking, and casual dining. Its affordability makes it ideal for social gatherings, hot pots where everyone drinks freely, and any occasion where quantity and conviviality matter as much as refinement. It is also essential in Japanese cooking.

## Warm Service

Much futsu-shu is designed for warm or hot serving. The fuller body from less polishing and the richer amino acid content develop beautifully with heat. A well-made futsu-shu at {{glossary:atsu-kan}} with grilled salted fish and a bowl of rice is a profoundly satisfying Japanese experience.

## A Category Worth Exploring

Do not dismiss futsu-shu. Seek out versions from reputable breweries, taste them warm alongside food, and judge them on their own merits. You may find a daily drinker that brings more enjoyment per yen than many premium bottles.
