Kumamoto is an unlikely sake stronghold in shochu-dominant Kyushu, famous for developing the Kumamoto Yeast (Kyokai No. 9) — one of the most important ginjo yeasts in Japanese brewing history. The prefecture's abundant groundwater from Mt. Aso's volcanic aquifers and humid climate create unique brewing conditions that produce rich, aromatic sakes.
