About

Developed by Nanbu Bijin brewery in Iwate Prefecture, a region famous for both sake and apples. The yeast was isolated from apple blossoms growing near the brewery, creating a unique terroir-driven connection between the local fruit and sake. The resulting sake has a distinctive apple character that reflects its Iwate origins — a beautiful example of how wild yeasts can express regional identity in sake.
