A rare, premium sake rice variety bred in Hyogo Prefecture from a cross involving Yamada Nishiki and Omachi lineage. Aiyama has an exceptionally large shinpaku and produces sake with rich, sweet, complex character prized by connoisseurs.

Aiyama was bred in 1941 but remained obscure for decades until Juyondai (Yamagata) showcased it in a celebrated bottling that brought the variety to national attention. The rice has an enormous grain with a very large shinpaku, but it is difficult to grow (tall stalks prone to lodging) and challenging to brew (the large shinpaku dissolves quickly, risking runaway fermentation). These difficulties limit production and make Aiyama sake inherently rare and expensive. When well-handled, Aiyama produces sake with extraordinary depth — rich sweetness, layered umami, and a velvety texture that sets it apart from any other variety.
