Kiku-Masamune is one of the pillars of the Nada brewing district with over 360 years of history. The brewery is a guardian of the kimoto method, maintaining this labor-intensive traditional starter technique when most breweries abandoned it. Their honjozo and kimoto junmai demonstrate the structured, umami-rich style that Nada water and tradition produce.
