Raifuku (Coming Happiness) in Chikusei, Ibaraki is known for its adventurous use of diverse flower yeasts — isolating natural yeasts from flowers like marigolds, sunflowers, begonias, and abelia to ferment sake. This floral yeast experimentation produces uniquely aromatic sakes with distinctive character. Their traditional Junmai line is also excellent, using Tsukuba mountain water.
