About

Suehiro in Aizu-Wakamatsu is a historic brewery in the samurai castle town of Aizu. The brewery is credited with developing the yamahai method — the simplified version of kimoto that eliminated the arduous pole-ramming (yama-oroshi) step. Their yamahai junmai and traditional Aizu-style sakes carry the depth and structure of centuries of Tohoku brewing wisdom.
