Tsuki no Katsura (Moon Laurel) in Fushimi is a pioneer of sparkling sake (happoushu), having introduced it in 1964 — decades before the recent sparkling sake trend. The brewery also historically had exclusive access to Aiyama rice. Their innovative spirit within Fushimi's traditional context makes them a bridge between sake's past and future.
