Harushika's Cho Karakuchi (Super Dry) Junmai is one of the driest sakes made in Japan, with an SMV of +12 that rivals Kochi's most extreme expressions. Despite the extreme dryness, it remains balanced with enough acidity and umami to avoid thinness. A bold, assertive sake that demands equally bold food — grilled meats, aged cheeses, and rich stews.
