This Junmai Ginjo uses Iwai, a Kyoto-exclusive sake rice variety that nearly went extinct before revival. The rare rice gives this expression a distinctive round, rich character with gentle sweetness and subtle umami. From the pioneer of sparkling sake, this still expression shows another facet of Fushimi's innovative spirit within tradition.
