Definition

A sake rice variety from Hiroshima Prefecture, descended from the Hattan family of rice cultivars. Hattan Nishiki produces sake with soft texture, gentle umami, and moderate aromatics, reflecting Hiroshima's soft-water brewing tradition.

The Hattan rice lineage is one of Hiroshima's most important agricultural achievements, with multiple variants (Hattan, Hattan Nishiki 1-go, Hattan Nishiki 2-go) developed over decades. Hattan Nishiki has a well-centered shinpaku and good polishing tolerance, making it suitable for ginjo and daiginjo production. The variety is particularly well-suited to Hiroshima's soft water, producing sake with the gentle, rounded character the prefecture is known for. Several Hiroshima breweries — including Kamotsuru, Sempuku, and Fukucho — use Hattan Nishiki as their primary rice.
