Sake served at a lukewarm temperature of approximately 40 degrees Celsius. Nurukan is often considered the sweet spot for warm sake, where gentle heat enhances umami and aroma without volatilizing alcohol excessively.

At nurukan temperature, sake reveals a different personality than when cold. Umami becomes more pronounced, acidity softens, and the overall impression is rounder and more comforting. Many sake professionals consider nurukan the ideal temperature for appreciating the full complexity of well-made junmai. The warmth also relaxes the palate, making nurukan an excellent choice between courses in a kaiseki meal. To achieve nurukan, place the tokkuri in 60-degree water for 2-3 minutes, checking frequently. A good rule of thumb: the tokkuri should feel comfortably warm when pressed against the back of the hand.
