The most prestigious sake rice variety, often called the 'king of sake rice.' Developed in Hyogo Prefecture in 1923 and officially registered in 1936, Yamada Nishiki dominates competition sake and premium daiginjo production.

Yamada Nishiki produces sake with a refined, elegant, and well-structured character. Its large grain size and prominent shinpaku allow polishing to 35% or even lower without breaking. The rice dissolves well during fermentation, contributing clean sweetness and umami. Hyogo Prefecture, especially the Toku A district of Yokawa and Miki, produces the finest Yamada Nishiki, commanding premium prices. Despite its dominance, the variety is challenging to grow: the tall plants lodge easily, and the long growing season limits it to warmer climates.
