Fukuoka is Kyushu's largest city and the gateway to the island's sake culture. While shochu dominates southern Kyushu, Fukuoka maintains a strong sake tradition with over 50 breweries. Soft water from the Sefuri mountains and excellent local Yamada Nishiki produce smooth, approachable sakes. Kitaya's 14th-generation brewing and Niwa no Uguisu are among the noted brands.
