概要

The highest traditional temperature at 55°C or above, tobikirikan produces a sharply dry and intensely hot sake. The name literally means 'extraordinary hot.' At this temperature, most aromatic subtlety is lost, but the sake gains an almost medicinal, stimulating quality. Reserved for the coldest winter nights and the most robust sake styles. Some aged koshu also reveal unexpected caramel and spice notes at this extreme heat.

推奨グレード

Only robust Honjozo, Futsushu, and heavily aged koshu. Never for premium ginjo — the heat destroys their character entirely.
