Definição

Undiluted sake that has not been cut with water after pressing. Genshu typically has a higher alcohol content of 17-20% and a more concentrated, bold flavor compared to standard sake.

Most sake undergoes warimizu (dilution with water) to bring the alcohol level down from the natural 18-20% to a more palatable 14-16%. Genshu skips this step, preserving the full intensity of the fermented brew. The richer texture and stronger flavors make genshu an excellent choice for pairing with robust dishes or serving on the rocks. Some modern brewers produce low-alcohol genshu by arresting fermentation early, achieving 13-14% without dilution while maintaining the concentrated character.
