Extremely soft water, specifically associated with Fushimi (Kyoto) brewing district. Gokusui has very low mineral content, producing gentle fermentation and yielding the soft, elegant sake style that defines Fushimi.

Fushimi's gokusui is drawn from underground aquifers fed by three rivers (Katsura, Uji, and Kizu) and has been prized for centuries. The water's extremely low hardness (approximately 40-60 mg/L calcium carbonate equivalent, compared to 150+ for Nada's miyamizu) means yeast receives minimal mineral nutrition, fermenting slowly and gently. The resulting sake is smooth, round, and delicate — the classic onna-zake (feminine sake) style. Fushimi's seven famous springs (goshui) are celebrated cultural landmarks, and breweries guard their water rights jealously.
