Alternate reading for Sake Meter Value (SMV), the scale measuring sake's specific gravity relative to water. Nihonshu-do and SMV refer to the same measurement and are used interchangeably in professional contexts.

While nihonshu-do is the Japanese technical term used in brewery labs and on Japanese-language labels, the English abbreviation SMV is more common in export markets and international sake education. The measurement is taken with a hydrometer at 15 degrees Celsius. Values typically range from -15 (very sweet) to +15 (very dry), though extreme examples exist outside this range. When evaluating a sake, always consider nihonshu-do alongside san-do (acidity) and amino-san-do (amino acid level) for a complete picture of the flavor balance.
