## Hiroshima's Own Rice

Hattan Nishiki (八反錦) is the signature sake rice of Hiroshima Prefecture, bred from the historic Hattan series of varieties that have been cultivated in the region for over a century. The variety was officially registered in 1984 and has become closely associated with Hiroshima's distinctive brewing style.

## Heritage Lineage

The Hattan rice lineage in Hiroshima dates back to the late 19th century. Hattan Nishiki was developed from Hattan 35 through deliberate breeding, improving grain size, shinpaku quality, and resistance to lodging while preserving the flavor characteristics that Hiroshima brewers value.

## Soft Water Compatibility

Hattan Nishiki is particularly well-suited to brewing with Hiroshima's characteristic medium-soft water. The rice dissolves at a rate that works harmoniously with the gentler fermentation driven by soft water, producing sake with clean lines and subtle complexity.

## Flavor Character

Sake brewed from Hattan Nishiki tends to be clean, elegant, and aromatically refined. The flavor shows less overt richness than Omachi and less structure than Yamada Nishiki, instead offering a transparent quality that showcases the brewer's technical skill.

Hiroshima's strong showing at national competitions owes much to Hattan Nishiki. The rice's clean character allows the {{glossary:ginjo-ka}} aromas developed through low-temperature fermentation to shine without interference. Many gold medal daiginjo from Hiroshima feature Hattan Nishiki.
