## Hiroshima's Own Rice

Hattan Nishiki (八反錦) is the signature sake rice of Hiroshima Prefecture, bred from the historic Hattan series of varieties that have been cultivated in the region for over a century. The variety was officially registered in 1984 and has become closely associated with Hiroshima's distinctive brewing style.

## Heritage Lineage

The Hattan rice lineage in Hiroshima dates back to the late 19th century. Hattan Nishiki was developed from Hattan 35 through deliberate breeding, improving grain size, shinpaku quality, and resistance to lodging while preserving the flavor characteristics that Hiroshima brewers value.

## Soft Water Compatibility
