A cross of Yamada Nishiki and Omachi developed in Hyogo Prefecture in 1941, Aiyama combines the best qualities of both parents: Yamada Nishiki's polishability with Omachi's rich depth. The large grain dissolves easily, producing lush, sweet, and intensely flavorful sakes. Long used exclusively by Tsuki no Katsura, it was released to other breweries in the 1990s.
