The undisputed king of sake rice, Yamada Nishiki was developed in Hyogo Prefecture in 1923 and registered in 1936. Its large shinpaku (starchy core), excellent water absorption, and resistance to cracking during polishing make it the gold standard for Daiginjo production. Hyogo's Toku-A district in Miki and Kato cities produces the most prized lots.
