Japan's second most planted sake rice, Gohyakumangoku was developed in Niigata in 1957 and named to celebrate the prefecture reaching 5 million koku of rice production. It produces the clean, light, dry tanrei karakuchi style that defines Niigata sake. The grain is smaller and more brittle than Yamada Nishiki, typically polished to 50-55% at most.
