Overview
A step up in milling from the brewery's standard Junmai, Akabu Junmai Ginjo is polished to 50% by Akabu Shuzo in Iwate Prefecture. It shows moderate fruity and floral character over a light rice base, with a gently sweet Sake Meter Value of -1, an acidity of 1.35, and an amino-acid level of 1.15. At 15.5% alcohol the finish is clean and balanced. The 50% polishing ratio comfortably surpasses the Junmai Ginjo requirement, yielding a more aromatic, refined profile than the base expression.
Description
Akabu's Junmai Ginjo elevates the Red Warrior's fresh, modern style with more pronounced fruit aromatics and silky texture. Vivid notes of muscat, pear, and white peach lead into a clean, balanced palate with a refreshing finish.
