A step up in milling from the brewery's standard Junmai, Akabu Junmai Ginjo is polished to 50% by Akabu Shuzo in Iwate Prefecture. It shows moderate fruity and floral character over a light rice base, with a gently sweet Sake Meter Value of -1, an acidity of 1.35, and an amino-acid level of 1.15. At 15.5% alcohol the finish is clean and balanced. The 50% polishing ratio comfortably surpasses the Junmai Ginjo requirement, yielding a more aromatic, refined profile than the base expression.
