Gassan Junmai Ginjo is brewed by Gassan Sake Brewery in Yamagata Prefecture from Dewa Sansan milled to 55%. An acidity of 1.3 and an amino-acid level of 1.1 frame a balanced palate, while a Sake Meter Value of +2 at 15% alcohol keeps the finish near dry. The brewery and sake take their name from Mount Gassan, one of the three sacred peaks of the Dewa region, whose meltwater feeds the local brewing tradition. The 55% milling and Dewa Sansan rice place it squarely in the Junmai Ginjo class.
Description
Gassan's Junmai Ginjo uses Yamagata's signature Dewa Sansan rice and volcanic spring water from sacred Mt. Gassan. Clean, mineral-driven, with gentle fruit aromatics and a balanced, medium-dry finish. This expression captures the spiritual purity of the Dewa Sanzan pilgrimage mountains in liquid form.
