From Ehime on the island of Shikoku, Ishizuchi Junmai Ginjo showcases a region less associated with famous sake. Ishizuchi Sake Brewing uses granite-filtered mountain water from Mt. Ishizuchi and Yamada Nishiki polished to 50% to make a soft, gentle sake with subtle fruit aromatics and a clean finish. It reaches 16% ABV with a sake meter value of +3 and a moderate acidity of 1.3. Its flavor draws on fruit, floral, and rice notes. National award recognition has brought wider attention to the brewery and to Shikoku's sake more broadly.
