Ishikawa Prefecture on the Sea of Japan coast has a long brewing tradition tied to its rich washoku food culture. The Noto Peninsula is home to the Noto Toji school, one of Japan's four major toji guilds. Sakes tend toward rich, full-bodied styles that complement the region's abundant seafood. Kokuryu (Fukui border) and Tedorigawa are among the best-known brands.
