Ishikawa
Clima
Ishikawa faces the Sea of Japan, receiving heavy seasonal snowfall that blankets the Noto Peninsula and Hakusan mountain range each winter. Cold, humid winters provide natural refrigeration for fermentation, while Hakusan's granite-filtered snowmelt yields moderately hard water with mineral character. The seasonal contrast between snowy winters and warm, humid summers shapes both rice cultivation and koji mold activity.
Sobre
Ishikawa Prefecture on the Sea of Japan coast has a long brewing tradition tied to its rich washoku food culture. The Noto Peninsula is home to the Noto Toji school, one of Japan's four major toji guilds. Sakes tend toward rich, full-bodied styles that complement the region's abundant seafood. Kokuryu (Fukui border) and Tedorigawa are among the best-known brands.
